
Ingredients:
boneless chicken breasts
red and green bell peppers
red & idaho potatoes
yellow onion
fresh garlic
coconut milk
parsley
jasmine rice
Chicken Curry Recipe:
1. brown chicken in olive oil (EVOO) for about 15 mins.
2. add chopped garlic & onions & potatoes
3. pour 1 can coconut milk and 1 tbsp. curry powder cook for 10 mins.
4. add sliced bell peppers and cook 10 mins.
5. garnish with sprigs of parsley and serve hot with jasmine rice
